Had this exact same thought recently. There seems to be growing demand for this. Iβd love to see a car manufacturer offer a model stripped of all the unnecessary tech and make a simple, reliable, and affordable car

I would be okay with minimal electronics. By today's standard, minimal would be practically none.
What this will likely look like if it happens is a super cheap car that just happens to have minimal electronics to save cost. That's the only way I see the trend reversing at this point.
Electric windows, locks, and a Bluetooth stereo would be okay.

somehow this kept running as a background process in my mind over night and i had to do some digging
there was decent open source car movement in 2010s but most of it seems dead now.
first we need to establish what are we trying to solve - transportation from point a to point b (a functional vehicle) or compliance with state laws and regulations to make a "road certified" car which is likely where a lot of the cost will come from.
EVs are in the lead here due to their simplicity with order of magnitude less parts which means less precision manufacturing etc.
several interesting projects:
i've also done some sleuthing to acquire tabby and rally fighter cad files just in case i live forever and find myself with an empty garage and motivation to build one, in case people want i can upload them somewhere
