i really enjoy the flavor of coffee and in residency unfortunately got myself hooked on caffeine. as i have weened myself off to a cup a day I have substituted decaf. unfortunately conventional decaf is washed with methylene chloride or ethyl acetate to dissolve the caffeine. the swiss water method uses a water that is saturated with green coffee solubles except for caffeine which allows the caffeine to diffuse into the solution leaving behind a swollen caffeine free bean that can be dried and roasted. it is currently the only chemical free decaf method and happens at the Swiss Water plant in Vancouver BC. image
