I got a bunch of oyster mushrooms from my neighbor, so I turned them into nam prik — a Thai chili dip made with roasted ingredients and herbs.
I’m having it with pan-seared mackerel, boiled eggs, and cucumber. To make the meal a bit more substantial, I also made some steak with nam jim jaew, a spicy-tangy Thai dipping sauce. Light but filling, and full of flavor!
