This is a rye sourdough bread baked on honey-smoked ham and a cabbage leaf.
Once an experiment.
Then forgotten.
And now revived, with a pinch of something new.
Like so many things that truly nourish us, ideas do not remain unchanged.
They grow when we question them, rest when we forget them, and return in a new form if we work on them.
Whether something appears as a principle or a reformed version of it is secondary.
What matters is:
Does it serve us?
As the year comes to a close, this feels like a good moment to reflect.
To create what truly serves us.
In the end, this seems to be what prevails.
Wishing you a gentle ending to this year and an energetic beginning to the next.
