You also have to trust that their e2e solution really is e2ee. Because nothing with Apple is open source.

Thatβs not really true. A lot of Appleβs key chain / security stuff has been opened sourced some years ago. But idk if iMessages encryption was part of that.
Stuff like swift and llvm and darwin are. They wouldn't get any deveoper adoption otherwise. Good luck finding anything related to their encryption open source that wasn't already. I would welcome being proven wrong.
