Why is this “unpopular” and why is this framed as an either or?

Money has 3 uses, 1: Store of value, 2: Medium of exchange, 3: Unit of account.
Using Bitcoin as savings to store value over time is it's primary use, that facilitates and enables the other 2 uses. You wouldn't accept anything as a medium of exchange if it didn't hold it's value over time.
We're getting more stable over time, but the fact remains that Bitcoin's primary use currently is still store of value and it likely always will be.
But we're getting there, and stacking is absolutely using.
Why do you think bitcoin will only ever be a store of value? I see people using bitcoin for payment more and more now, especially thanks to lightning. I pay for some services in bitcoin and I see more of them every year, although still very few.
Moreover, I am a developer with a couple of products that I am starting to convert to bitcoin standard and accept payments in bitcoin. I do it because it is actually more convenient to accept and pay in bitcoin than in fiat, and secondly it allows me to accept payments globally. I can't use USD because of geo-restrictions.
And the best part: no commissions and full control over the money you earn.
So accepting payments in bitcoin for me is becoming not just something pleasant, it is becoming a necessity.
I didn't say it would ONLY be a store of value, just that it's primary use case will likely always be so. People will always store more energy in their savings than they're spending or receiving, and it's their trust in it's ability as a store of value that will enable the other uses.
