Recipe Monday Apple Snack Squares: 2 cups sugar 2 eggs 3/4 cups vegetable oil 2-1/2 cups self rising flour 1 teaspoon ground cinnamon 3 cups diced peeled tart apples 1 cup chopped walnuts 3/4 cup chocolate chips In a bowl, combine sugar, eggs, and oil and mix well. Stir in flour and cinnamon (batter will be thick). Stir in apples and nuts. Spread into a greased 13in x 9in x 2in baking pan. Sprinkle with chocolate chips. Bake at 350 degrees for 35-40 minutes or until golden and a toothpick inserted near the center comes out clean. Cool before cutting. image

Recipe Monday: Cinnamon Love Knots: 2 packages active dry yeast 1/2 cup warm water 1/2 cup warm milk 1/2 cup softened butter 1/2 cup sugar 2 eggs, beaten 1 teaspoon salt 4-5 cups all purpose flour Topping: 2 cups sugar 2 tablespoons ground cinnamon 3/4 cup melted butter In a large mixing bowl dissolve the yeast in the warm water, let stand for 5 minutes. Add milk, butter, sugar, eggs, and salt. Stir in enough flour to make a dough. Turn the dough onto a floured surface, knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, flipping once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. Punch dough down and divide into 3 portions, cover 2 with plastic wrap and shape one portion in 12 balls. Roll each ball into a 8 inch rope. Combine sugar and cinnamon. Dip rope into melted butter, then coat with cinnamon-sugar. Tie into a knot, tuck and pinch peat with remaining dough. Cover and let rise until doubled, about 30 minutes. Bake at 375 degrees for 12-14 minutes or until golden brown. image
