The traditional pig slaughter in Serbia 🇷🇸 as well as the neighboring Bosnia and Herzegovina 🇧🇦, Croatia 🇭🇷, and Slovenia 🇸🇮, is a widespread practice that involves pig slaughtering, processing, and meat butchering, and is observed by rural families, usually in late autumn.
This tradition is locally called 'koline,' 'kolinje,' 'prašćina,' 'svinjokolj,' 'svinjokolja,' or 'posjek,' depending on the location. The names literally mean "pig-slaughtering."
After it is cut into pieces, the meat from the animal is processed further. The traditionally produced ham ('šunka'), bacon ('slanina'), sausages ('kobasica') such as blood sausage ('krvavica'), and kulen are well-known local delicacies.
Non-meat products such as cracklings ('čvarci') or švargl and aspic ('hladetina') are also respected as parts of traditional cuisine in these countries.
