I don't know the chemistry, but @Great Ghee made my popcorn fluffier and better tasting.
My eggs are also fluffier with better flavor.
The house isn't full of smoke either.
Don't over think it.
Carry on.

About to buy a 1990s Corolla to see if it'll run on ghee. Will update.

The future is here now!! We are very excited to drop a spoon of said @Great Ghee into our delicious cacao for extra levels of creaminess and deliciousness!
What did you use before on eggs and popcorn? Neither of those 2 smoke my house up.
Regular butter. Consider also that my "house" is actually a small apartment and I never remember to use the hood vent. It doesn't take much to smoke my house up π I probably wouldn't have noticed that point otherwise.
Crazy. I use butter all the time and never have smoke. Too much heat maybe?
I don't know. I didn't change anything else and everything I tested had better results. It makes sense that the butter would smoke before the ghee, so probably.
But the smoke is like the absolute last point on the list for me. For some reason, things felt fluffier. Don't know how else to describe it, but it tastes better. It could very well have to do with the smoke points and heat. I don't know the chemistry at all.
I see... Yeah, butter will smoke in the high heat for popcorn, I use coconut oil to pop the corn, then melt a 1/2 stick of butter slowly over the small burner on the stove in a metal measuring cup. Then when the popcorn is done drizzle and salt to taste... I use a deep cast iron pan, I think it's the chicken fryer one with a lid, with an occasional shake so the corn doesn't burn. 1 table spoon of coconut with 2/3 cup of kernels.
Cooking eggs medium heat, I mix coconut oil +butter in a fry pan when the butter starts to bubble I'll add eggs and cook on low
But the ghee sounds like something I need to try.
