The videos need to be stored somewhere, if it isn't on your computer then it's on someone else

Yes, this is the point, as Plebs leverages multiple Blossom hosts to store the videos/images. This creates censorship-resistance. Where even if Plebs were somehow legally compelled to hide showing a video, it’s hosted/viewable elsewhere across Nostr 😎

Blossom is great but i don't think it's so simple like image hosting as videos can be thousands times bigger in size. This won't be a problem for short videos but for long ones it could reach gigabytes and this will become problematic for long-term storage (unless each user self-host anything of course)

Plebs supports filesizes up to 2GB and it then compresses on the client-side to a maximum filesize of 100MB. This allows for larger videos to be handled, despite the limitations of Blossom's hash generation for larger files.
