Every time you go to do it, if your documentation isn't the most braindead step-by-step YouTube-tier tutorial, add to it. If you think it's finished and complete, sit someone else down at your terminal, and see if they can follow it knowing fuck-all about your infra. And now, every time you're paralyzed, just open the doc, and start following the tutorial. Is full automation better? Well, yes, but until it's one-touch, at least document the series of scripts you run, and why they were created in the first place.
