Recipe Monday: Merry Christmas Wreath: 1 package of active dry yeast or 1 cake compressed yeast 1/4 cup water 1 cup milk, scalded 1/4 cup sugar 3/4 cup shortening 1 teaspoon salt 1 well-beaten egg 3 1/2 cups sifted all purpose flour Soften active dry yeast in warm water or compressed yeast in lukewarm water. Combine milk, sugar, shortening and salt. Cool to lukewarm. Add softened yeast and egg. Gradually stir in flour to form a soft dough, then beat vigorously. Cover and let rise in a warm place until double in size, about 2 hours. Grease a 10 inch ring mold, spread bottom with sugar fruit topping, then melt 2 tablespoons of butter, add 2 tablespoons light corn syrup and 1/2 cup of brown sugar. Place halved candied cherries, cut side up and almonds on sugar mixture. Shape dough into small balls, then roll in melted butter and then place 2 rows deep into the pan. Let double. Bake in oven for 20 to 25 minutes at 400 degrees. Loosen then turn out quickly. Best served warm. Pumpkin Oatmeal Bites: 2 cups all purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1 cup butter 1 1/2 cups packed brown sugar 2 eggs 3/4 canned pumpkin 3 cups quick-cooking rolled oats 1 cup raisins or semi sweet chocolate pieces. Stir together flour, cinnamon, baking soda, baking powder, salt, and nutmeg. In a large mixer bowl beat butter until soft. Add brown sugar and beat until fluffy. Add eggs and beat well. Beat in pumpkin. Add flour mixture and beat until well mixed. Stir in oats and raisins or chocolate pieces. Drop rounded teaspoons onto an un-greased cookie sheet. Bake in a 350 degree oven about 12 minutes or until done. Remove and cool. Makes about 120. image
