Recipe Monday: Green Bean Supreme: 1/2 cup of sliced onion 2 tablespoons butter 2 tablespoons all purpose flour 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon grated lemon peel 1 tablespoon snipped parsley 5 cups drained, cooked, or canned green beans 1 cup dairy sour cream 1/2 cup shredded sharp American cheese 2 tablespoon butter, melted 1/2 cup dry bread crumbs Cook onion in 2 tablespoons butter until tender but not brown. Add flour, salt, pepper, lemon peel, and parsley. Cook and stir until mixture bubbles. Blend in sour cream. Add beans, then heat through, stirring. Turn into 10x6x11.5 inch baking dish. Top with cheese. Combine melted butter and bread crumbs then sprinkle over beans. Broil until cheese melts and crumbles brown.
